Strawberry and Arugula Salad

This spring the weather has been bouncing back and forth between hot and cool. The strawberries, salad greens, asparagus, mint and kale featured at the market this May are crops that thrive in cool and cloudy weather but also love the warm sun. So whether you’re having a cozy dinner inside or out in the yard for a Memorial Day barbeque, this simple yet flavorful salad will add a fresh taste to any occasion.

Feel free to combine the arugula with other seasonal greens such as spinach, beet greens and other salad greens.  And any choice of cheese from Birchrun Hills Farm or Shellbark Hollow Farm will top off the salad perfectly.  Sunflower seeds or pepitas from Selene are also a great addition!

STRAWBERRY AND ARUGULA SALAD

3 – 4 cups Hillside Farm arugula (other salad greens can be mixed with the arugula)

1 cup sliced A.T Buzby Farm’s or Fruitwood Farm’s strawberries

1/2 cup crumbled Shellbark Hollow Farm’s goat cheese (optional)

2 T. Olive Oil

2 T. Balsalmic Vinegar

fresh pepper

Mix greens and strawberries. Drizzle oil and vinegar over the salad and toss. Add cheese and pepper to taste. Enjoy!
